October - Recipe - Peppered Garlic Rosemary Crusted Halibut Cheeks

Pepper Garlic Rosemary Crusted Halibut Cheeks

4-6 Halibut Cheeks (can be purchased from Fresh Off the Boat @ the farmers markets), thawed
1/2 box of Momma Nellie's Peppered Garlic Rosemary Crisps
1 egg, beaten in a small bowl
Olive Oil (or cooking oil of choice)

Thaw the Halibut Cheeks. 

Place 1/2 box Crisps in plastic bag and crush as finely as you can. If needed, work out any aggression by beating with a wooden rolling pin! Very effective! Once fine, place crumbs onto a plate.

Heat a frying pan over low - medium heat

Coat the Halibut Cheeks with the beaten egg, then pat into the crumbs, then place into the frying pan. Repeat until all cheeks are in pan. 

Allow to cook for several minutes but check often to ensure it doesn't burn. Once slightly brown on one side, flip. If cheeks are thick you may need to reduce heat to low, and cover with a lid to ensure they are cooked through. 

Once both sides are browned, and fish is cooked through, ENJOY! Delicious with your favourite rice dish, or side dish of choice! 

Will serve 2 - 3 people depending upon appetite!
